Products: Product: Dry sour with instant apple flour and wheat semolina
A new product has been developed with the use of instant flour from apple presses, rich in fiber and a significant amount of antioxidants, which improves its nutritional value. Instant flour is obtained by extruding apple presses separated in the production of apple juice.
The created food product is functional in composition and complies with the requirements set in the food legislation of Bulgaria and the European Union.
The research activity is related to the development of projects funded by national and international programs in the following areas: functional foods and beverages; transfer of technologies for value added food production; new food ingredients and raw materials targeted at specific target groups; non-destructive methods of food quality control; methods for sensory and textural profiles of food. The applied activity is concentrated in the National Accredited Laboratory for Testing Food, Beverages and Water, which performs safety quality analyzes of 17 food groups;
